Here are the ingredients to make Thai Coconut Curry according to Meghan Merkel’s recipe:

Ingredients

1 cup brown basmati rice

1 cup coconut milk

1 tin chopped tomatoes

1 tbsp ginger

1 cup chili flakes

1 cup butternut squash

2 aubergine

3 tbsp chickpeas

brown miso paste

coriander

How to make Thai Coconut Curry:

Put coconut milk, tomato, crushed ginger, red pepper, and salt as required in a pan and put it on the stove and cook it on low heat till it boils.

Now peel the eggplant and pumpkin, cut them into small pieces and add to the curry.

Now cook this curry for 30 minutes, then add gram, brown mezzo paste and coriander and cook for another 30 minutes.

When the vegetables are melted, turn off the stove.

Now eat this Thai coconut curry with rice.

Note:

You can use any available vegetables at home instead of pumpkins and eggplants.

You can also add vegetables of your choice.

Red or white meat can also be added.

Cook the curry over low heat.
